Made this two days ago and still have some in the fridge.
This is an everything but the kitchen sink kind of dish.
I was using things in the pantry, fridge, and freezer that just needed to go!
- bag of frozen black eyed peas, thawed
- bag of frozen peppers, red, yellow, and green, thawed
- bag of frozen spinach, thawed
- bag of frozen corn thawed
Mix the above in a large bowl
- 8 lasagna noodles cooked until almost soft
- 8 oz of fat free cream cheese, softened
- 1 cup of shredded cheese, I used cheddar jack
- 1 jar of Newman's Own tomato sauce, garlic
Use a 9 x 13 casserole dish.
Put a layer of the veggies on the bottom.
Layer of noodles.
Spread half of the cream cheese on noodles.
Half of the sauce.
Another Veggie layer.
Noodles.
Rest of the cream cheese.
Sauce.
Sprinkle the top with shredded cheese.
Bake at 350 for 45 minutes.
Was good and filling. Would use Eggplant instead of Noodles normally, add more sauce, and replace cream cheese with cottage cheese.
